Start a Holiday Tradition: Christmas Tamales

Every year on Christmas eve I make tamales for my family and neighbors. It has become a holiday tradition and labor of love and my girlfriends join me with their own recipes in my kitchen. We cook our tamales and socialize and drink and it’s all very festive. In the event you’d like to start a tamale tradition of your own, here’s a great recipe. My family loves it and insist I make them every year.  Happy holidays to everyone.

Chicken Tamales Recipe from Maseca Collection – Jesus Bojorquez

Mexican Recipe Ingredients:

6 cups Maseca Corn Masa Mix for Tamales
6 cups Chicken broth
1 cup corn oil
2 tsp salt
1 tsp baking powder
1 1/2 large rotisserie chicken
2 cans salsa verde or tomatillo sauce
1 bag corn husks

Mexican Recipe Instructions:

Soak the corn husks in warm water until soft.
Blend with an electric mixer Maseca corn masa mix for tamales, corn oil, salt, baking powder and the chicken broth to obtain a consistent mixture.
Shred the chicken and marinate in the green salsa or tomatillo sauce.
Spread masa evenly over corn husks, and spread a spoonful of marinated chicken on top of the masa.
Fold the sides of the corn husk to center over the masa so that they overlap to make along package.
Fold the empty part of the husk under so that it rest against the side of the tamale with a seam.
Place the tamales in a steamer and cook tamales for 35-40 minutes. Check every 20 minutes.The tamales are cooked when they separate easily from the corn husk.

The Grinch Who Stole Christmas Cards

As we speak I have 10 Christmas cards. I used to have a huge stack by mid-December but then I gave up on sending them. I guess I brought this on myself. I broke this tradition with much guilt and trepidation. It seemed quite sacrilegious to give up on holiday cards. We wrote a couple hundred each year (at great expense I might add) with pictures of our kids. But then it got so tiring with celebrating Hanukkah and Christmas and making tamales. Something had to give. Besides some years they didn’t go out until after Christmas or even New Year. Christmas cards in the mail by New Years. Then I found many of the people who sent me cards started sending them electronically. Singing, dancing Christmas cards online. And then I discovered I was keeping in touch with all those people who I used to send cards to on Facebook or by email. The once a year communication seemed unnecessary when you were in touch all year long. Of the ten cards I have, three are from people my parent’s age and one is from a charity asking for donations. It seems to be a lost art. But I miss those holiday greetings. The letter from Jim O’Donnell documenting every sporting event he went to all year long. The one from Ian Pearson with words that jumped off the page. The card from Orin Friesen which always made me laugh. And of course the pictures of children in various stages of growing up, even if they’re not so cute as teenagers, that lived on our refrigerator all year long. I think our electronic connectedness has caused one of the most civilized practices of all to disappear, the annual greeting in the form of a card, delivered in the mail saying happy holidays, merry Christmas and happy new year.

Economy Sucks Journal #1 12.17.08

I’m so glad we decided not to take that cruise over the holidays.  I came back from Beijing feeling a bit flush after 90 straight days of producing at the Olympics.  A Caribbean vacation sounded like a great way to spend winter break but my teenage son didn’t want to do anything that didn’t include his friends so we decided to celebrate at home.  As I look at the direction the economy is going I am grateful for his surly teenage attitude.  At the moment the money seems better in the bank.

So many people I know are uncertain about 2009.  The angst seems to transcend the color of their collar.  My housekeeper brings her unemployed construction worker son-in-law to help her clean.  He moved from Minnesota to Denver because there was no work.  A newcomer to Denver who I have coffee with tells me her fiancee is one of the 35,000 laid of workers at Bank of America.  My colleagues in television are being downsized.  Every day I read of more on the beach.  Even my friends in real estate and business development are seeing their deals collapse because no one is lending.  On a brighter note my banker called and asked if we want to refinance.  Maybe now that the Fed has lowered interest rates to nothing there will be some relief. 

A year ago I produced a story for NBC about a family facing foreclosure at Christmas and how there was nothing under the tree for the children.  Viewers responded to them with so much kindness.  I thought it couldn’t get worse than it was a year ago but here we are 12 months later and everyone is being touched.  As I count my blessings I worry for those falling through the cracks and the charities who work to help them.  And experts say things will get worse before they get better.  Scary times!
